Vinification
Manual harvest and sort with fermentation in stainless steel. Each variety is vinified separately. The maceration period lasts ten days, after which the wine is transferred to large oak barrels where malolactic conversion occurs.
Maturation
6 months in French oak barrels followed by another 6 months in bottle.
