Vineyard Area
This cuvée is drawn from three sites around the cellar in the village of Congy. The Meunier comes from a vineyard called "Dure Peine" (planted in 1929); the Chardonnay, from Cornabeaux (planted in 1969); and the Pinot Noir, from a site called Morettes, planted in 1990.
Soil
Chalky, clay-limestone loam
Vinification
Fermentation occurs entirely in 228-liter oak barrels with aging for 6 months on the fine lees without malolactic conversion.
Maturation
Blended with 40% reserve wine which currently 2021
