Exposure: South, east

Vinification: 100% manual harvest. Fermentation in 3/4 stainless steel vats, and 1/4 in 20-year-old old oak vat. No malolactic fermentation occurs.

Vinification: 100% manual harvest. Long co-fermentation and maceration in temperature-controlled, 15-year-old oak vats with indigenous yeast.

Maturation: One year in the same oak vat.
