Vinification
Hand-harvested a rigorously sorted before a gentle press of whole bunches. The juice ferments in a combination of stainless steel and oak barrels.

Maturation
50% in stainless steel tank and 50% in 228-liter oak barrels of one to three previous wines

Hand-harvested and rigorously sorted before destemming and foot-treading. Fermentation occurs in entirely in stainless steel vessels. The wine ages in combination of stainless and oak barrels.
