Vinification
Hand-harvested and completely de-stemmed followed by a gentle press of the grapes and a cold settling. The fermentation is long and cool in temperatured-controlled stainless steel vats. Malolactic fermentation is blocked.

Maturation
6-8 months on the fine lees in stainless steel followed by a cold stabilization, light clarification and filtration prior to bottling.
