Farming Practice
Lutte raisonnée with de-budding and crop-thinning
Vinification
Grapes are harvested by hand, sorted and de-stemmed. After a gentle crush, they are placed in temperature-controlled concrete vats where pump-overs are performed during a 3-week maceration. After running off of the juice, malolactic fermentation is carried and finally the wine is racked to French oak barrels.

14 months in one and two-year old French oak barrels
