Manually harvested, sorted and de-stemmed before a 4-day cold-soak. Native yeast fermentation and maceration in stainless steel with few pump-overs and once-daily punch-downs over an 18-day period.

60% in 40-hectoliter foudre and the remaining in concrete and stainless steel tanks. Minimal S02 at bottling.
