Vinification
Each variety is harvested by hand, starting with Merlot, followed by Sangiovese one to two weeks later. Cabernet Sauvignon is harvested last. Each variety is vinifed separately and native-yeast fermented in stainless steel vats. After fermentation, the wines are moved to French oak barrels.

Maturation
Minimum 12 months in used French oak barrels before final blending.
