Vinification: Manually harvested followed by a gentle fermentation in both stainless steel (60%) and 500-liter oak barrels (40%) where malolactic fermentation occurs.

Maturation: 4 months on the fine lees. Minimal S02 at bottling.

Vinification: Manually harvested, sorted and de-stemmed before a 4-day cold-soak. Native yeast fermentation and maceration in stainless steel with few pump-overs and once-daily punch-downs over an 18-day period.

Maturation: 60% in 40-hectoliter foudre and the remaining in concrete and stainless steel tanks. Minimal S02 at bottling.
