Vineyard Area: From sloped parcels in the Menetou-Salon appellation (very close to Sancerre) of vines planted over 30 years ago.
Soil: Kimmeridgian chalky-limestone and calcareous rocky-marl
Exposure: Southwest
Vinification: Hand-harvested and completely de-stemmed followed by a gentle press of the grapes and a cold settling. The fermentation is long and cool in temperatured-controlled stainless steel vats. Malolactic fermentation is blocked.
Maturation: 6-8 months on the fine lees in stainless steel followed by a cold stabilization, light clarification and filtration prior to bottling.
