Manual, partially destemmed. Fermented in temperature-controlled concrete tanks over 3–4 weeks, with a focus on gentle extraction for a silky, elegant texture.
Maturation
A blend of concrete tanks, stainless steel, and neutral demi-muids, to round out the wine without imparting oak character.

Vineyard Area
This is the flagship wine, sourced from a blend of well-exposed hillside parcels on the southeastern part of the appellation: Pied Redon, Terre Ferme, Reveirores, and Saint Jean. The vines are quite old — 60 to 90 years — and grown almost exclusively on classic galets roulés (rolled stones) terroir

Maturation
18 months, split 50/50 between concrete/stainless steel and neutral French oak demi-muids and foudres, followed by an additional 12 months of bottle aging in their cellar before release. That's a notably long élevage for the appellation and reflects real commitment to quality.
