Vinification
Fully destemmed and gravity-fed into smaller open-top fermentors. Grapes are cold-soaked for five days before undergoing a 14-day maceration/fermentation during which pump-overs and gentle punchdowns are performed. Malolactic fermentation occurs in French oak barrels.

Maturation
10 months (30% new oak)
